Kanate Ungkasrithongkul researched dishes he remembered from childhood, growing up in a small city in Thailand. Stir-fried noodle dishes like pad thai and pad see ew share the menu with Ungkasrithongkul’s favorite Thai boat noodles served with braised beef.
